I'm a big fan of the three mortal kombat games on ps2 (Deception, Deadly Alliance, Shaolin Monks).
they have fighting, weapons, and a story mode
If you haven't played resident evil 4 definitely get that, its a shooter, but one of the best games made for the ps2

Soulcalibur II as well as the MK games. I 've also been enjoying yakuza which is like a 3d beat-em-up crossed with an RPG and has a decent amount of weapons, and also the dynasty/samurai warriors but they're a love 'em/hate 'em kinda thing.

Mortal Combat Shaolin Monks : Is pretty hard by yourself but if you have a friend you can play co-op mode and it's really fun and still challenging. There are weapons but I like multalities and brutalities (although they don't help you to gain experience...but they're fun)

All three are great fighters, plus SC3 and MKA have custom fighter options, so you can create your own fighter.

I like all dynasty warrior games,different characters used different kinds of weapon.u will have fun killing alot of people and even can edit your own character to make it more stronger in dynasty warrior 4.
I also like those marvel vs capcoms or street fighters vs king of fighters type of games.
