It's a free choice.
Under italian law (since 1975 family law reform) a married woman can use:
her original name
his husband name
both (her name first)
she can shift as she likes.

Ex: Maria Rossi is married with Luigi Bianchi
she can present herself as
Maria Rossi
Maria Bianchi
Maria Rossi Bianchi

Usually (according today custom), original name is prefered in a job situation

It is an option. They can keep their maiden name or keep it as a second surname.
