She breaks every rule, disregards customers needs and is self absorbed and a liar..and the job market to hire is extremely scarce..what would be better...fire her or close on those shift nites and put a note that when we find good dependable and caring staff members we will reopen..and hopefully ASAP....or any other suggestions...our numbers are going down every month

Clearly, this employees is a detriment to the business, get rid of her ASAP. Begin recruiting for another employee immediately, using all the means at your disposal - Internet, local bartender schools, word of mouth, newspaper ads, etc.

Be sure you have documentation to support your actions, or you could face an "unlawful discharge" lawsuit.

As to coverage, why could you cover the shift until another bartender is hired.

Fire her if she is not doing her job. Post ads now to find a good bartender, there are many out there just looking for a good job. Post around college's and in the newspaper...it should take that long to find someone new and you can suck it up and work until you do. If you close you may lose more business then you would staying open with her.

fire the bad bartender...there are many to find out there...put an add in the paper...and don't be afraid to train some one...just because they cant mix every drink in the book doesn't mean they don't know how to get along with customers which is the most important part...heck where you located...i could go for another bar tending job...
