As I recall, the chick was singing about him leaving her or cheating on her, and that was the thing he wouldn't do...it's at the very end of the song

so if you read the first line of this verse, and then the last line, you will understand the context. What he wont do is forget the way you feel right now, and again in another verse,
But I'll never forgive myself if we dont go all the way - Tonight
No he wont do that. Hope this clears up all this myth about this song.

Watch the VH1: Storytellers special with Meatloaf. He explains that "that" is everything in the line before it.
Example. But I'll never stop dreaming bout you every night of my life, no way. And I would do anything for love, but I wont do that. "That" in this case is stop dreaming about her and so on and so on

In the line, "I will do anything for love, but I won't do that," the "that" is whatever he said just before that. For example... "But I'll never forget the way you feel right now-- Oh no--no way-- I would do anything for love, But I won't do that" - The "that" in this particular verse is "forget the way you feel right now." Meat Loaf said this himself on his StoryTellers episode on VH1.
"I would do anything for love but i won't do that" after the girl sings "Sooner or later you'll be screwing around" ... He only says: "I won't do that"... so he isn't stating that cheating is doing anything for love..

Well, when the girl says "I know the _____ (still haven't figured out what she's saying there) honey, I've been around, It'll all turn to dust and we'll all fall down. Sooner or later you'll be screwin' around"..THAT'S when he says "I won't do that"...so, *I* think it means that he won't cheat on her or ever be unfaithful to her.
