I'm interested in the biological changes that allows an animal to mate at that specific time of year.

Which animal? You really have to be specific.

It can range from growing special structures to attract mates, changing color, ovulating(or going into heat), bulking up(females so that they can provide energy for their young to grow and males if they have to compete).

There's more...but you have to pick an animal before I can give you all the specifics...but most animals do undergo some changes...some as simple as just getting sexually excited....which is caused by a release of hormones.
