Not only monkeys. Wardens in our large jails say that the inmates often do the same thing. They throw their own waste at the wardens. Some wardens go so far as to wear face masks to protect themselves.
Monkeys in a cage are actually inmates in a prison. Remember monkeys are programed to swing through the trees with no limit on how far they can go. Zoo animals are condemned prisoners. Expect unnatural behavior.

Intelligence. I think it's brilliant that monkeys throw poo at potential predetors. What better way to get someone to back off than throwing a steaming pile at them? I know that I would turn and go the other way if someone threw some crap at me.

Monkeys throwing their crap at us is gesture of friendship.
They cannot understand language so when we yell "stupid ape" jump up and down and make faces at them they think we like them.
They think we are there for their amusement and since they have no physical contact with us they decide to share a piece of themselves with us.
What else have they got to give us!!

Maybe to mark their territory that there better or keep predators like humans away.
