I'd try typing 'the history & traditions of christmas' into the Amazon website & seeing what comes up.
I just did & found rather a lot of books - including this one

which might be just what you are looking for as apparently it deals with the origins, evolution, and meaning of Christmas rituals and practices of many nations, including caroling, Christmas drama, the manger, the Christmas tree, the Yule log, and the twelve days.
But there are lots there to choose from - sorry I cannot recommend one from personal experience.
