Milkfish bones are composed of calcium predominantly but that is indigestible. You can skim the little soft tissue around it (periosteum) for protein and complex fat. You can grind the bones and hopefully get rare nutrients and metals from its very little marrow.
Best is not to eat milkfish bones. You will not feed your pet these bones, will you? Pets and humans can choke on small bones.

Generally, composition of bones are Calcium, Phosphorus, and Collagen (fibrous protein). That may also be the same for Milkfish's bones.
