I'm job searching and debating about whether some of the companies I interview with are really ethical and honest companies to work for. How do you really tell?

The best way to tell this is to ask around and try to find people who currently work at or used to work at these companies. To do this, you'll probably need a good network of contacts, or at least some really good internet searching skills. But asking current/past employees is really the best way to find out what the people at a company are like, because you pretty much can't tell anything from an interview.

first off, unless they are non profit, the primary reason for existance of any company is to make money,
if they are big companies see if they have a mission statement. Try talking to an employee in the cafeteria, or outside on a smoke break.

theres the standard things like better biz beaureu tax records records past and present of comp stock and shares revenue

yes all these work well, but my ways of deduction come from truly trusting my gut instincts about the bosses and leaders of that company. In all my years it still stands firm and true.

You wont ever know for sure until you're in a circumstance where you have to trust your employer. When that happens, if they prove trustworthy, than yes, they can be trusted. If they don't prove themselves.... I would secretly start looking for another job. You never want your employer to know that you are looking for another job, it has actually been proven to increase your chances to be fired.
