My Side of the Mountain is excellent. I can't remember the name of the author, but I am sure you can find it as it's an award winning children's book. There was a sequel as well, but I never read it.
The Cay is also good. So is Island of the Blue Dolphins.
Where the Red Fern Grows,When Legends Die, and Treasure Island are also great, but I am not sure they are exactly what you are looking for.

For non-fiction works, try the "Foxfire" series. It is a collection of instructions , tips and stories from the backwoods and old timers on things like ; how to build a cabin, how to make soap, which herbs and plants are safe to eat, ect.

"Lost on a Mountain in Maine" by Donn Fenderson. A true story and he's still alive.
