Yes, they have and they also produce a hormone within the brain that is extracted and used in captive breeding of shrimp. In many shrimp processing plants, all the shrimp heads are collected, dried and incorporated into a special food and this is used to both grow the shrimp but stimulate breeding.

Yes, but you are right to question how much. Although shrimps have brains more 'primitive' species such as jellyfish don't. They aren't cephalized ie don't have a central control region but rather a neural (diffuse) net.
