The difference between blue and red has to do with the wavelength of photons that compose the colors. Red has a very long wavelength and a short frequency, and in some senses is "weaker". Comparitivley, blue (and violet moreso) have a shorter wavelength and a higher frequency. This represents a small fraction of the electromagnetic spectrum.

Wavelength. Blue and Red are at the opposite ends of the light spectrum that can be detected by our brains.

Blue is a higher quality supposedly. Like a blue blood. Rather than a plain old red blood.
