There is an optimal evirnment for bacteria growth. Honney is too sugary (too much food) and pickels have too much acid in the liquid. This does not mean that they will never grow though.

Long ago man discovered that food could be preserved by pickling. Bacteria can not grow in an acid environment.
Honey is very sweet and it could cause the water to be drawn out of bacteria cells , but that is not the only reason that it does not grow mold or bacteria. There is honey found in the pyramids that was still good. We do not know what the antibiotic is in honey. However, there have been spores found in honey that can harm babies under 1 year.

Honey is hydrophyllic which prevents the bacteria from getting any water and pickles are highly acidic and saline and the bacteria can't handle it. Honey was once used to embalm people including Alexander the Great. Honey has been found several hundred years old that was still edible.

Well, honey doesn't spoil due to its high sugar content- it absorbs water, drawing it straight out of the bacteria via osmosis. Pickles are loaded with vinegar, which is especially bad for bacteria- as an acid, it dissolves them. I hope that answers your question.

Pickles are preserved by the method of adding salt and Honey after all by sugar.

In additon honey can contain botulism toxin that acts as an antibiotic.
