Almost everything except the turkey itself can be done vegetarian style. Just make sure what kind of vegetarians you have -- a vegan Thanksgiving is a lot tougher (no eggs, no milk).
I think the Vegetarian Times suggested serving a stuffed pumpkin/squash as the centerpiece for the feast. This takes the place of turkey, as the big ooh-and-ah dish.
Oh, and I'd check on the jello situation. My family always serves a jello salad of some sort, but many vegetarians won't eat gelatin.
The big thing is to get together and have fun -- plan some Thanksgiving activities, and make that the center of the day. Touch football outside? Sharing thankfulness stories? God forbid -- snowman making! Oh boy, I'm not ready for snow yet (-:.

As someone who has personally tried Tofurky, I'd avoid it. It tastes terrible. From my own personal experience check out some of the things Morningstar Products has to offer in your grocery store. They have fake chicken or ground beef you can do pretty much anything to. Beyond that you should experiment with tofu or tempeh. Tofu when frozen and thawed has a nice chewy texture like meat and can take on pretty much any flavor you marinate it to.

Serve all the normal stuff except the turkey (unless you want some). Between the stuffing (you can make it in the oven without any animal products), yams, twice baked potatoes, vegetables, cranberry and pumpkin and pecan pie, everybody should be happy.

Look on FoodTV.com. They have tons of awesome Vegitarian reciepes. Bobbi Flay is always grilling up veggies and Tofu and things of that nature.
