Although I'm certainly not at all "proficient" in any (yet), besides English, what are some examples of listing abilities in foreign languages on resumes?

I already tried googling this, and I actually had a hard time finding them.

Do you list the languages and write in parenthesis what the proficiency is? (Conversational, reading/writing proficient, working knowledge) How do you define working knowledge of a language anyway?

Er, I certainly wouldn't list any language I wasn't proficient in (doesn't make any sense...), I'm just thinking ahead for the future when hopefully I can say with pride that I am proficient, convesational, etc. in whatever language. :)

You could list them in "Relevant Skills," or a similar section of the resume, as "Remedial, Conversational, or Fluent."

on the bottom of your resume under "special skills" or under "education" would simply put proficient in Dutch, German, English, etc.

of would simply say

bilingual or as the case may be trilingual

then let the employer ask which languages you speak.

would never list any language that you arent proficient in
