The new sanded grout was put in yesterday and it's darker than the rest of the grout. The repair man said that it would be darker until it dries and that it would take 48-72 hours for it to dry, but I am concerned. Shouldn't I be??

Since it has not yet been 48 hours, I would say no -- it really does get lighter and you have a good bit of time to wait! Good luck!

I have changed grout colors before, and by the time I was done, I wished I would have left them the same. It is a lot of work to do it the right way. You need to remove at least half of the current grout by whatever means you feel comfortable with. You can use a grout saw, a hand held tool that is covered with carbide grit that you "grind" the old out. You can also use a grout tool on a Dremel. this method is faster, but makes more of a mess, and is easier to damage the tile. The style of baseboard you use is up to you. But keep in mind resale value. It is a good idea to keep with the same style. Same style does not always mean it has the exact same profile. Personally I don't think that those towel bars look antique. As long as the mirror does not have beveled edges, it can be cut. But mirrors are not all that expensive to replace.

Yes, there is dry time for grout. You will also find that it may never match exactly, due to different lot numbers, the specific mix the repairman used, was the other grout sealed etc. etc..
