Long LONG ago, LOL......seriously, though, when schools started becoming more prevalent out in the West, in the 1800s, apples and other fresh fruit had to be freighted to the settlers. A teacher was not paid very much at all in those days (sounds kinda like today, actually), sometimes working for just room and board. An apple was considered a luxury, so families would send an apple with the student, kind of as payment, since they were also cash poor. Chickens, or a loaf of baked bread, a cup of sugar, all those "luxuries" were given to the teacher, but most commonly an apple or a pear. It kind of became a symbol of teachers over the years, and it stuck! Hope this simply explaination helps....its probably, more definitely, not the FINAL answer to the question, but its what I've heard out here in the "wild west".

the tree of knowledge was an apple tree.... therefore, we symbolize our desire to learn by giving said teacher said apple.
