One classic one I like to do was some, have umbrellas that they keep in the office for rain. Empty the hole puncher dots into the umbrella and wait until the use it again.

Cover everything in their office/desk/cube with aluminum foil.
Fill their cube with packing peanuts or balloons.

turn their desk backwards and put everything on top where it should be, so they don't notice until they sit down
