Because those are the pages that are exposed constantly to the environment. Ever seen an old newspaper with a weird color? Well same thing. You are seeing two possilbities..1.) the paper has changed color cause it has been more exposed than the rest of the page..or 2.) the book maker colored it that way to protect it from the environment.

The rust-coloured edges on books is called "foxing." Because it's brown like a fox. Gettit? Foxing is caused by chemicals in the paper breaking down. Older paper (-pre 19th cent.) does not fox, because the chemical compounds are not found in it.
