They can vary from 30" to 36". There are also 'pocket' doors that take up no room when opened. They go inside the wall. Not all applications can use this type of door.

Well there isnt really a standard size that people use.. doors come in a variety of sizes but the most common sizes are 6'-8", 7', and 8' tall and can vary in width from 16" up to 42" unless you start to go custom.
remember that is that actual size of the door itself, there is a gap between it and the door jamb, so if your question is what size door you need to replace an existing one, measure the iside of the jamb. If you want to replace the whole thing, then you should replace it as a unit jamb and all, then you need to pick your size, and make the rough opening about 1/2" larger than that size of the whole unit, then use shims to wedge it in tight and nail it in place.

Standard opening height is 80 inches, but does in fact vary. The door height itself is usually trimmed to fit the opening when installed but a standard pre-hung door would be about 3/8" less.
There are several standard widths referred to as two numbers, feet and inches. The most common interior doors are 2-6 (30 inches) and 2-8 (32 inches). Anything wider than 3-0 (36 inches) would be unusual. There are narrower doors than 2-6 but they are usually used for closets.
