I'm a big fan of movies with the Muppets - they usually have a lot of humor adults would appreciate in addition to the kids'. Some of the great ones are:
Muppet Christmas Carol (best telling of that story EVER)
Muppets from Space
Muppet Treasure Island

yeah Shrek is funny too.
I would suggest some of the Christmas films like the Santaa Clause or it's sequels.
The Santa Clause3 is coming to theaters tomorrow and I'm going to see it to kick off the Christmas season.
