Vanilla fudge's version of You keep me hanging on originally by Diana Ross and the Supremes and Manfred Mann's earth band's version of Bruce Springsteen's Blinded by the light. Both covers are better than the originals and both of the original versions were absolute classics to begin with!

I love covers so find it difficult to choose.
The Blood Sisters' reggae version of Anita Ward's Ring My Bell is great.
Color Theory did an excellent cover of Depeche Mode's Leave In Silence
Frank Sidebottom has done too many hilarious covers to mention.
