It's a 'love/hate' relationship actually. The chef LOVES the food because it's a replacement for real human relationships/interactions. This is why most chefs take up ice sculpting. Forget sculpted 'swans' that you see chefs create in public, it's the twisted erotic sculptures they create at home and what they do with them that is REALLY scary.

The chef also HATES food because it's the food that has made him 300+ lbs. of fat on a stick. And though a chef can always fall back on his erotic ice sculptures, alas he/she will always have an empty hole in their heart for human companionship that no amount of hot bisquits and gravy can ever hope to fill.

A chef should feel the same way about food that a writer feels about words, or a painter feels about his paints and canvas.

He should pretty much have a love relationship going on with food. He should be passionate, connected and totally enjoy what he does with food. Whats the point of doing something if you can't enjoy it.

They should probably have a great knowledge of all different cultures and know how to prepare every different kind of dish.
