With all of the issues with lettuce, spinich, and now tomatoes recently I have decided not to serve a salad course with Thanksgiving dinner this year. I would love to serve a vegatable (the main dinner has too few, but I don't want to add there) or some other yummy - and possibly healthy - first course. Stuffed artichokes are out becuase my guests don't like them. Any have an idea that does not involve raw produce? I actually like my in-laws and don't want to serve them e-coli or salmonella.

How about a bean salad? Take one can of green beans, one can of chickpeas, one can of yellow beans, and one can of pinto beans. Drain, rinse, put in a salad bowl. Dress with dried herbs, lemon juice, olive oil, salt and pepper. Serve chilled.

This is healthy, with safe veggies, and as a chilled salad it will be a different aspect to the rest of the dinner. You can also make it ahead of time, like the night before, and make your cooking day easier.

Hi sandy c-t, I thought this salad would make a good "first" course.
1/4 cup fresh lemon juice
1/4 cup Dijon mustard
5 teaspoons honey
2/3 cup extra-virgin olive oil
1 large bunch celery with leaves

2 large Granny Smith apples, peeled, quartered, cored; each quarter cut into 2 wedges, then thinly sliced crosswise into triangle shapes
3/4 cup walnuts, toasted, chopped




Whisk first 3 ingredients in small bowl to blend. Gradually whisk in oil. Season vinaigrette with salt and pepper.
Trim celery leaves and chop enough to measure 1 cup. Thinly slice stalks on deep diagonal. Place celery pieces in bowl of cold water. (Vinaigrette, celery leaves, and celery pieces can be prepared 1 day ahead. Cover separately and refrigerate.)

Drain celery; pat dry with paper towels. Combine celery, celery leaves, apples, and walnuts in large bowl. Add vinaigrette and toss to coat. Season salad to taste with salt and pepper.

Makes 8 servings.

I really think you are being a little paranoid. I eat Salad everynight and still no problem.

Anyway..how about corn chowder or butternut squash soup?

As they are canned, your fears are alleviated.
