It'll show the IP address for where you are at, IP addresses change for every location. Your one at home is to access internet only at home. If you go other places and want to access their internet you have to configure your IP to theirs. So most naturally it'll change unless by some coincidence they use the same you do.
At any rate you have the control to change your IP address at anytime.

If you haven't plugged your laptop into a network or tried to connect to wireless, then it will have the last IPyou used. As soon as you connect to an internet connection, a request is sent out for a leased IP address that will be used until the lease expires and you are provided with a new one.

No. You will likely be assigned a private address that will get translated to a routable address of your hotel's or office's ISP as your traffic leaves your computer. As always - keep your virus defs up to date, be sure your firewall is enabled etc.
