This two options are very different. In Canary Islands, with a subtropical weather you can expect the same than in Florida, though a little bit cooler. Just for sun and beach (of course there are some interesting things to see, but nothing compare with Spain). You must consider that canary Island are 2000Km to the south of Spain.
In Spain in December you can forget Sun and Beach Holidays, you have millions of things to see, you can also Ski, but forget to come back suntanned.
If it si your first visit to Spain, you must be contious that is imposible to see everithing that is worthy.
I would focus on one area only, so your chances are:
a)Castilla, visiting, Madrid, Toledo, Segovia, Salamanca. Good food, incredible monuments, quite chilling for December. Take your anorak, and it is not rare if snows.
b)Cataluña and Valencia: Barcelona, Vic, Valencia. Better weather, less impresive monuments except in Barcelona, good food.
c)Andalucia, visiting, Seville, Granada, Cordoba, etc..., Good weather in the cost, can be chilling inland. Magnificent arquitecture, somes of them, like the mosque of Granada and the Palace of La Alhambra incredible pieces of Human History.
Of course there are other impresive places to be visited like the north of Spain, following the bay of Biscay, from San Sebastian to Santiago de Compostela, but I would not recomend them for a first visit.
