I know that you have to have cabbage and an egg or 2 but what are some other good ingrediants to make okonomiaki.

I had it in Japan but i forget what I saw in it!

And grated Japanese yams.
When making a good okonomiyaki you gotta have grated yams in the batter. I usually put at least half of the full sized they sell in super markets. But becareful because some people are allergic to it. I've seen people rash up like they'd touched poison ivy.

Tenkasu (Deep fried flour dough) is also a nice extra to have.
I usually add it on top with the shaved Bonito (Katsuo-Bushi) and Okonomiyaki sauce.

Wait, did someone mention flour already?
In case they haven't you also need flour to make the batter.
Probably the most important thing.

Oh and cheese too.
Cheese is another great thing you can add on to you yaki.

If you don't have Okonomiyaki sauce where you live, BBQ sauce, mayo, and some ketchup, and some soy sauce should do the trick.

Man I love okonomiyaki. I'm getting excited just talking about it.

I like okonomiyake with a scallop in the cent re, like the hub in a wheel. I also like modanyaki, which is sort of like a okonomiyake/yaki-soba sandwich. It's Hiroshima school. Make two crepe-like thin okonmiyake and yak-soba. Put the yaki-soba on one of the okonomiyake and then put the other on top as the "cover" and then flip the whole thing over. Then eat it directly off the griddle with the spatula rather than chopsticks, and wash it down with a quart of Sapporo beer for a truly brilliant dining experince And people say Japanese food isn't fattening :)!

Leek (Welsh onions) go great in okonomi-yaki!

It's usual to have thinly sliced pork on the top, but you can really use anything you like! Many people mix in tiny little dried shrimps! If you want to add prawns, you can either mix them in or use them on top instead of the pork!

Don't forget to add some dashi to the batter, and two eggs mixed in per okonomi-yaki makes it extra nice!

It's excellent served on top of yaki-soba too - that's called modern-yaki...!

And don't forget the nori and the benishouga (red pickled ginger) - if you've got any..!

Oh yeah, Japanese cabbages are more mild than most other countries' cabbages, so don't use too much..!
