That's only because you don't fully control that dream. You still think things you don't want to manifest in the dream, and some of those things appear there. For example, if you want to fly in your dream, you may be a bit afraid of falling or inability to control the landing. Suddenly, this fear manifests in your dream, and you will fall or have a crash landing.
It's not that easy to keep in control during your dreams, even if you have learned how to do it. Besides, when you start having lucid dreams, normal dreams don't cease to exists. There are very lucid dreams (where you have full control), and there are normal dreams (where you don't even realize that you are dreaming until you wake up), and then there's everything in between. It is possible you haven't yet learned to really fully control your dreams, but only scratched the surface.

Are you sure you are able to control your dreams? Maybe you think you do & that's why things still happen. I have a friend that controls his dreams very easily & he doesn't seem to have that problem.

Because the brain is free-firing massive amounts of information and most people only have limited (if any) control. Heck, they only have limited control when they are awake !
