I don't have a problem with what you did, but it's illegal in most states. You can't just dock a persons pay for spilling something unless it's in their contract, or if you've warned them on a previous occasion and sign something agreeing to it. And I don't think you can get in trouble for telling other people what you did, but an employee has a "right to reasonable privacy".....All that said if he sucks that bad you have a perfectly good reason for termination so get rid of the guy and get someone who knows what they're doing.

Legally you cannot deduct money from his pay. That is the price of investment in your workers and the cost for the opportunity of having your own business. Is the dressing set-up in a convenient way for the worker(s) to access/dispense the product; maybe some modifications are needed in the work area settings or the way tools/appliances/food products are arranged. Perhaps an employee evaluation is needed where you can sit down and discuss, without anger, both of your needs, concerns, etc. Explain that when the company succeeds, it is with the help of competent staff and that they too reap the benefits, i.e. higher wages, bonuses, etc.

First, spell out the rules in the shop and the corresponding penalties if violated. Post it in the workers area in big bold letters. Implement it seriously.

You are cheap. If he consistantly doesnt listen to you then fire him. How the hell is docking someone a dollar going to make your money back when all you do is turn a huge profit on making pizzas.

If you gave him direct instruction and he refused it you deserve whatever you get for not firing him on the spot.
