Gutter Press--although you won't likely make any money off it.
Coachhouse Books--specializing in more experimental and poetry. They pioneered the use of off-white paper.
Those are the only two I know of. You can find them on the internet. If its a more academic book maybe try U of T or Ryerson--I think they both have their own publishing houses. I'm pretty sure there is also a larger publishing house called something Macdonald in Toronto but i'm not sure.

Disregard the guy who says you'll have to go to Detroit--you can definitely get a book published in Toronto and many other places in Southern Ontario.
