I think it's because a lot of people have enough money in their retirement accounts to take a risk by getting out of their careers and trying something they've always wanted to do with their lives. When you're in your 20s and 30s, you have a lot of obligations (bills, kids, etc.) that don't allow you the flexibility to go after the career you always dreamed of, because on the off-chance it didn't work out, you'd be left jobless and probably penniless, a risk most twenty-and-thirty-somethings aren't willing to take.
When you're in your 40s and 50s, however, your kids are usually all grown up and moved out, and you have a nice savings account and a lot of stuff has been paid down/off over the years. You're not quite ready to retire yet (and aren't that well off financially to just have no job at all), so you decide to go be a pastry chef or a massage therapist or whatever yo've been thinking about doing.
Also, I think it's because the daily grind gets to them and they face burnout. My mom's 50 and she's a teacher, and she's been one for like 25 years now. She's really good at it, but she doesn't have the same love for teaching (or kids) that she used to have. Teaching for 25 years will do that to you. Anyway, she's totally ready to retire now, but she has to stay in it for another 5 years because she's not well off enough to just retire yet. If she had any other ideas for a career, she could leave teaching and go do that for a little while.

Some people are forced to due to company down sizing. Others just want a change of pace. For those who didn't have a "career" per se...they might just want to have one.

I guess they would rather do something they want to do at the last stretch of life than be stuck doing what they thought they HAD to do for all those years.

because thats when they realize that life is too short to spend day after day doing something or working somewhere that your no longer happy.
