Make sure it's a training course, and not just some idiots full of themselves since they can ride anything on two wheels. Make sure they are giving "instruction", not just directions. There should be classroom theory on handling before you even hit the parking lot. See if they are accredited with any motorcycle organization, i.e., AMA, HOG, etc.

Before you even leave for the class make sure you have what the class requires. Most official classes tell you to bring all kinds of good stuff. An actual riding jacket, full finger gloves, boots, sturdy long leg pants, (Like denim or better.) and you will need glasses or goggles, and a brain bucket.

Check you bike before you leave. You won't be able to participate in a "real" class without all the safety equipment working. They WILL make an example of you if anything is wrong. And don't forget to leave your attitude at the door. If they are legit, they actually do know what they are doing and will not allow anyone to disturb the class with hotdogging, or remarks about other students.

Questions? Ask lots of questions. No question is stupid to these people. If it can happen on a bike, they know what to do. And they know if it does happen, then they lost a student for the advanced class! They don't like to lose students since they are income for them.

Good luck, ride safe, and Ciao! Remember, There are old bikers, there are bold bikers, but there are no old, bold, bikers.

The most important and hardest
thing to do is ride a motorcycle slowly.
Any idiot can fly down a road a full speed,
but it takes talent and practice to ride
slowly. If you can navigate a course at
slow speed, then you can ride with confidence
and control.
Learn how to ride slow, because I have yet
to see a drivers test that asked you to redline
a bike.

Take a course sponsored by the Motorcycle Safety Foundation (MSF)...and then just pay attention...it's the best couple hundred bucks you can spend if you want to learn to ride a bike...

Good luck, have fun, be safe!
