Is anyone aware of any products that I could attach to the end of steel fish tape (for pulling cable / wire through walls) so that I could determine the location of the tip of the tape through a wall?

You should not put anything on the tip because you want your fish tape to be able to go through the tightest of the openings.

Use white paint marks at regular intervals and count them when feeding the fish tape in. You have a general idea about where the tape is sidewise because it will be surely trapped between the studs and you'll have a general idea about the position height wise based on your length marks.
