I's suggest calling them 'pal' or failing that 'John'.

I'm not 100% certain what a Glasweigian calls somebody from Edinburgh - but I know what they call someone from London.
I certainly know what one called me the other night in the pub when I told him he was smoking in a non-smoking area!
The doctor said I should be able to walk in about 4 days time but it might take a bit longer to get the glass out of my scalp.

Anything you like - I work in the City there, and most people you encounter in shops hospitality service etc are foreign. East Coaster is probably about right, but if you go to
experts.about.com/q/Scottish-Culture-2999/Edinburgh-People.htm
it will tell you that.....
People from Edinburgh call themselves Edinburghians.

A Burger?
It would make sense, especially because you can tell the clan of a Scotsman by putting your hand up his kilt. If it's quarter-pounder, he's a McDonald ;-)
