My engine temp moves fast enough that my temp gauge was almost describable as bouncing today. It also took an unusually long time for the truck to heat up. I checked the oil and am waiting for the truck to cool to check the coolant. The truck never overheated it just got warm and cold ridiculously fast. I was driving 55 mph and its about 60 degrees out on a clear day so its not environmental.

It could be your thermostat is faulty. This could lead to the faulty readings, when the truck was actually heating up, but the gauge was stuck. This caused the truck to continue to heat, and then the guage read it and "bounced". I don't think the physical properties of heat transference can change in your truck, so you might want to get it checked.

You're low on coolant. The coolant level is going below the temperature sensor, causing wild swings.
How a thermostat could cause the engine to cool that fast is a mystery. I think it's just the only thing these dimwits know to say.

Could be the thermostat, but first check for a loose connection at the sensor.
