Well, I guess they think you could end up completely destroying your operating system and lose all the data on your hard drive. So, you take a dvd-rom and copy all the files and programs on your computer that you want to keep onto it. Use a program for burning dvd-rom like Nero.

Easily
Click Start, Run. Type ntbackup
A backup wizard will start, select backup files, click next til you get to where it asks you what to backup, select Let me choose what to backup, and click next.
Expand My Computer, and select System State
Click Next, then choose the location to backup to, I would just make a folder on your C: drive, or if you have an external backup drive you could do that as well.
Then let it run, the system state backup just takes a few minutes to run.
Another good idea is running system restore and creating a restore point. Click Start -> Programs -> Accessories -> System Tools -> System Restore. Choose to create a restore point, then name it something like Pre-IE7 install and click next, it will make a restore point for you. If IE7 hoses your box, boot to safe mode, and it will ask you if you want to run system restore when the desktop boots.

If you don't know how to back up files, maybe you should not be running beta versions. IE7 is still full of bugs, and you don't sound like you have the know-how to prepare for them or correct the problems they will cause.

I wouldn't trust to Windows backup wizard because it is more safely to backup your system on the external drive. I'd recommend you to purchase Acronis True Image and backup everything to the external drive.
