I tie it in knots when it's drying but the creases drop out very quickly as the silk has become very soft. Is there some thing I could spray on to make the fabric stiffer and the creases hold? Would starch spray work?

When you wash it...whilst it's still wet...twist it up/screw it (depending on the type of crinkles) then put it on the radiator to dry, or somewhere warm.
What I do.
But with cotton clothes...i guess it'd be the same with silk :S not too hot though!
hope it helps!

use a spray bottle to mist some water on it - just a little, then crinkle it up and put a towel on top of it. It should dry crinkly in about 2 hours

Don't use fabric softener when you wash...and twist it when it's wet.
