They're just called stitches, or raised stitches.

The seams are what is created when the two pieces of material are sewn together - hence the terms "two-seam" or "four-seam" when referring to pitches.

They are NOT called seams, and anyone who says so needs to grab a dictionary and look up what a "seam" is - without the stitches, there would be no seams.
