It depends on where you are going. It can get hot in some parts of Texas at Christmas.

Take a wind-resistant coat, the wind is very cold and will cut right through you
Dress in layers as the day might start off cold, be warm in the mid-day then cold again at night
If you get the chance go to Fredricksburg, they have a great holiday atmosphere
