It is cooking but also health and hygiene in the kitchen and other things connected to working with food. Correct ways to handle and store food. Timings of how long long you have to cool hot food down before storing and which shelve to store things on in your fridge. Lots of other culinary things like that.

most food technology studies cover the following areas:-

food preparation

food production and design covers different kinds of food ie meat veg cakes desserts etc

methods of cooking ie boiling, roasting, frying etc

nutritional information ie what goodness is in foods ie vitamins minerals etc and also the bad stuff like fats and sugar

food hygiene - teaches of the laws regarding how food is prepared and produced and how to prevent food poisoning etc

thats about it really

In UK schools it is 'cooking' masquerading as something more academic. It seems to be most often taught by uptight middle-aged women who are WI members and still seem to think rationing is in effect.
