I have now pretty much laid the OSB 11mm boarding, 30cm angle over 5 meters ( not a lot then ), will or should I overlap the ends and sides more than recommended, would this improve or hinder the project outcome, planning to over lap sides by 4 or 5 ridges or more and ends by up to a foot or two or more, ides welcome cheers.

You shouldn't need to overlap the edges any more then the manufacturer recommends. If you are worried about water infiltration, you can add a bead of caulk along the ridge when you put the panels down.

Installation as directed will provide most advantageous coverage, will not affect performance. The manufacturer is concerned about performance, durability and customer satisfaction...would not throw you a bum steer about overlap in order to misrepresent coverage. Email the manufacturer for relevant info.
