It depends on what terminal you arrive. If you arrive at Terminal 4, the underground doesn´t get there, so it will be better to get a bus to the city centre. It will take you about 15 minutes, but I don´t know the price as whenever I have arrived to/from Terminal 4 was by plane too.
If you arrive at Terminal 1 or 2 or 3, then you can take the underground to the city centre. You just follow the signals "METRO" (that means underground in Spanish). The stop for the airport is "Barajas". We used to take line 8 (pink one) from Barajas to Nuevos Ministerios, where you can change to other lines. Anyway, line 8 was supposed to be on repairing work until Sep 06, and I don´t know whether they will have finished yet. If they have not, then take line 8 in Barajas and get out in the next stop: Mar de Cristal and there you take line 4 (direction Arguelles), whose next stop must be "Esperanza". Then you can get out either in "Goya" or "Alonso Martínez" which are the most centric; it will depend which part of Madrid you are going to. The ticket is 1,50€. If you want the cheapest option take the underground. A single trip costs 1€ and the entrance is close to terminal 2. If you arrive to terminal 4, take the free-of-charge shuttle to terminal 2. The time to reach the city center depends on where exactly you are going but it'd be like 30-45 minutes (add 30 minutes more from terminal 4)
If you want the fastest option, you'll need a taxi. The price depends on the time and where you are going. Usually between 20€ and 32€ including 4,50€ (airport supplement).

Not long, about 15-20 minutes. Expect to pay about 25-30ish Euros in a taxi. Not speaking much Spanish, i gave the driver a 20 note as his metre said 16euros but he hit the roof. Boundry charges for the airport appernetly. Enjoy.
