Serve whatever you want. It doesn't have to be turkey. Do you like ham, pork, chicken, beef, ethnic foods? Figure out what you like and be creative with it.

You could even do heavy appetizers from the frozen section of Costco/Sam's. They are hearty enough that people can easily make a meal out of them.

Cook a turkey slice it up to make turkey paninis. If you dont know what a panini is its a grilled sandwich( made with a panini grill) with meat, cheese and vegetables such as peppers and onions. Their really good. Wolfgang puck has a panini grill. Im not sure where you can buy it at though.

You could do smoked ham sandwiches. That way the ham doesn't have to stay warm if you have people coming and going. That's still pretty basic though - for something different how about stuffed peppers or tortilla soup.

Two years ago, we went to my mother's on Thanksgiving for a cook out. You could smoke a turkey, chicken, pork, or beef. Barbecue would be good, too. If it's cold in your part of the country, then you could grill out, and bring it inside.

How about a theme, like Chinese food, or a luau. You can decorate accordingly and could even order take out.

If everyones eating elsewhere, how about finger foods or deserts. You can have small sandwiches, chips or veggies with dip, pies, pastries, gourmet coffee. Set it up buffet style so they can help themselves.

Stuffed acorn squash. There are a ton of various recipes for it online. I think it would be great with a cranberry/apple stuffing.
