It's Maltase. The maltase enzyme is perfectly shaped to accept a maltose molecule and break the bond between its two glucose molecules. A single maltase enzyme can break in excess of 1,000 maltose bonds per second, and will only accept maltose molecules.

Maltase is an enzyme specific to act on Maltose, however there are other Amylases that will act on Maltose but not so efficiently.

It is MALTASE. Please note the -ase ending. -Ase suffix means it is an enzyme, with very few exceptions.
