There are no stable careers. Everything is a risk, either to the company or to you.
In corporate world, the older you get, the more of a liability you are to the company because your salary increases every year since the time you started. So, if you started working at age 25 and one day, when you become 55, don't be surprised that you will be fired or laid off.
For self-employed, like doctors or sales people or agents, you need to continuously put in lots of work to make lots of money. Sooner or later you either max out or burn out.
For business owners, this is the most rewarding career if you do it right. Lots of risk involved, but if the business works, you are better off than the rest of the population. In early 1900's, 90% of Americans own a business. Today, less than 5% own a business and they represent the top 5% of the wealthy people.

I think it fluctuates with time. Right now, the health-care industry is doing very well, where they are consistently adding jobs to their sector(1.7m according to businessweek)

Get a job in sewer work. There are always going to be people and they are always going to poop. There will always be a need for sewer workers.
When people kid you about your job, you can tell them "It may be crap to you, but it's my bread and butter."
