Zionism is a political ideology founded in the 19th century by Jews. Most Zionists are, in fact, Jewish, though there are also non Jews who self describe themselves as Zionist. If they adhere to a Zionist ideology, then the description is correct.

Zionists and Zionism in general are pretty up front about what they stand for. Nothing at all has been hijacked. Calling the country of Israel "The State of Israel" makes perfect sense.

Not all Zionists are Jewish. Some of Israel's most fervent supporters are fundamentalist Christians. Nobody "hijacked" the term Israel.

Zionism is a political ideology. It wouldn't matter what religion an individual is from. Zionism is another form of fascism. Since people don't like to hear that they might be fascist they use the term Zionist.
