Any animal with a brain and a spinal column can have a stroke and I would think that the signs mimic those that happen in humans: dragging of one side of the body or weakness in an a leg or on one part of the face. Difficulty eating or drinking could also be a sign. If you even think you're pet has had a stroke, get them into the vet first thing tomorrow morning. No need to make this poor creature suffer unnecessarily. Hugs~

Is it possible? Probably.
Does it probably happen very often? No, it probably doesn't. There are several other things that could be mistaken for a stroke happening in a rabbit and most likely it is something else like running into a cage wall and breaking it's back an inner ear infection, wry neck or something like that.

I know they can get heat stroke. I think they need to be taken care of right away.

yeah pretty sure they can...i had a big rabbit once and im in 4H and my 4H leader concluded that my rabbit had a stroke (hes a major expert on rabbits) cuz he stopped eating and his hops were crooked.
