In response to Dan - how would a headless horseman RIDE? Or do anything for that matter, he has no head! We are not talking logic here -

Probably a sort of grunt of wind escaping the cut windpipe each time he hit the tree branches.

Can't you picture the horse constantly knocking the horseman off it on purpose out of spite for its punishment?

probably the metallic SHWING!! of his cutting off heads and such...
Or he could have farted or something. But I don't think that was in the story. It would take out some of the mystery, somehow.
