You describe the stereotypical Irishman, he is almost extinct! The classical Irishman is not 3rd or 4th generation Irish/American, he lives in Eire, he doesn`t just talk about it! He is generous, unselfish, loves children, dogs, conversation, and is tolerant of other nationalities ( even Spanish speakers), enjoys a joke and a good laugh, will lend you money and forget about it, works hard, likes home comforts, holds long term friendships, forgets insults, and enjoys a drink.

the classic irish man is neither a known specifically as a "drunk" or a "good person" but a story teller, family man, and a general people person. sure they love a drink here and there but if you ever get a chance to sit down with an elder from Ireland, take some time to hear some stories. it's well worth the time!

Oh be serious!
Irish men are friendly, funny ,charming and good fun in general.
Please be aware that you probably find more drunks in other European countries than in Ireland.
We like to drink in Ireland but that's because its always been part of our culture but it certainly doesn't mean that all Irish men are alcos!!
Have you ever even been to Ireland??
If not go and see what you are missing.
