If it is a flat key, the major key is the second to the last flat reading from left to right (by the way, 1 flat is F Major).

For sharps, add a half-step to the last sharp (reading them from left to right).

For example, if there is one sharp, it is an F#. One half-step from F# is G. That's G-Major.

You have to determine from the music if it's written to be in a minor or major key. The relative minor is a minor third below the major key.
